One Soufflé at a Time: A Memoir of Food and France, by Anne Willan and Amy Friedman, published by St. Martin's Press, September 2013.

Amy Friedman helped Anne Willan, one of the culinary world's greatest treasures, to capture the tales of her multi-faceted life as creator of the legendary École de Cuisine La Varenne. Willan opens her story on La Varenne's opening day as she nervously awaits Craig Claiborne's judgment on her brand new school (c'est bon!) and tells her own story along with those of food-world greats — including her friend Julia Child, Simone Beck, Claiborne, and Richard Olney — who changed the way the world eats.

Willan has won innumerable awards and kudos in her storied career, and in 2014 One Soufflé captured the International Association of Culinary Professionals (IACP) Award for Best Literary Food Writing. On working with Amy Friedman, Willan said, “Amy picked up my ‘voice' very early on and has carried it with style and a great deal of hard work, adding excellent structure and planning to the book. She has become a very good friend, what better recommendation could there be!”
